I'm a Vegan Girl, in a Vegan World

Remember Johnny's song-of-the-morning post? Well, one recent morning (I don't remember which one, I think my subconscious is trying to block it out...), the song was Barbie Girl. Why? I'm asking myself the same question...Consequently, the song has been stuck in my head ever since, and has birthed the title to this post.

It is not actually a vegan world, but being vegan has been easier than I thought (thus far). Here's a quick run down for those of you who love the short and sweet of things:
  • Saturday-Almost forgot I was vegan about seventeen times. Had to google if the bagel I was handed at a work event was vegan or not, because I was starving and there was nothing else in sight. Redeemed the day by going grocery shopping with Johnny and picking up some GREAT new foods to try. Johnny and I split a large bowl of homemade guacamole and tortilla chips for dinner. What can I say...we love guac. A lot.
  • Sunday-Almost forgot I was vegan about five times (getting better). Made these wraps that my dear friend BA and her husband made us a few weeks back. They were amazing. I didn't have Italian dressing, but I made an olive oil concoction that was just as good.
  • Monday-Forgot I was vegan once (progress!), but savored a Chipotle order for lunch (rice, black beans, salsa, guac, peppers and onions, tortilla). Also had some pasta and red sauce with Johnny, and surprisingly did not miss the grated cheese as much as I thought I might.
  • Tuesday-Didn't forget I was vegan (woot woot)! Ate my first veggie burger, topped with sliced tomato, fresh spinach, and a toasted bun. Rockin. Also whipped up some couscous, black beans, broccoli, and mushrooms for dinner.
  • Wednesday-Made a vegan pizza (vegan crust I bought at Wegmans, olive oil, sliced tomatoes, spinach, and shredded mozzarella rice cheese). The cheese was sort of weird when I popped a shred in my mouth, but melted on the pizza well and tasted almost exactly like real mozzarella cheese. Almost.
All in all, I am loving this. I feel amazing. I feel healthy. And I do not feel constrained with food choices. There are so many options, and so many ways to be creative about it. Who knows how I'll feel on day 29, but days 1-6 have been really great. I'll keep ya posted!
